The commercial electric griddle or electric plancha, is effectively a solid hot metal plate on which food can be cooked directly on the surface, through the transfer of heat from the metal plate into the food product. Griddles and planchas are available from various manufacturers offering different sizes, plate thicknesses and single or multiple heat zones. Accuracy of temperature control, ease-of-cleaning and uniformity of surface temperatures varies from manufacturer to manufacturer and depends on the plate material and thickness, the type, style and placement of electrical heating elements and temperature controls and the overall design of the product.
