4 Pieces Of Equipment For Great Outdoor Dining

With hot summer days now in full swing, thoughts turn to al fresco dining.  From a water vapour chargrill to an Italian pizza oven, cooking equipment for outside catering is becoming ever more sophisticated.

Here are 4 pieces of equipment to help you show off your outdoor cooking skills to the full!

  • Kamado Joe - BBQ Grill

Originally a hit across America, the Kamado Joe is rising in popularity across the UK.

Proving especially popular for smoking fish, meat and vegetables, the Kamado Joe is great for grilling and searing.  By keeping the heat in the grill, meat retains its moisture and as the Kamado Joe uses lumpwood charcoal, it imparts that distinctive wood-fire flavour. With the simple addition of a baking stone the Kamado can also be used for baking breads and cooking pizza.

  • Wood Burning Pizza Oven

Also rising in popularity across the UK the authentic Italian pizza oven is ideal for cooking authentic wood pizza, larger roasts and grilled dishes.  The MAM Forni CUBO gas or wood fired pizza oven comes fully assembled and ready to cook on straight away.  Should you wish to build your own, Target supply the MAM Forni wood fired pizza oven in kit form.

  • Stainless Steel BBQ - Made To Measure

The ultimate stainless steel BBQ manufactured to suit you!  With Target's stainless steel fabrication facility you can design your ideal BBQ and Target will manufacture to suit you.  Ideal for larger outdoor spaces and for charcoal barbeque enthusiasts the stainless steel BBQ is easy to use and keep clean.  Being manufactured out of stainless steel there is no need to worry about rust when not in use.  Just wheel it out and get cooking!

  • Water Vapour Chargrill - The Indoor BBQ

Too hot outside -  why not take your BBQ inside?

This electric vapour grill allows you to rethink the way you chargrill.  A new way of healthy cooking, with the fat content being reduced during the cooking process and dropping safely into the water bath below.  The water vapour chargrill allows you to replace the traditional indoor BBQ gas chargrill and at the same time cook meat quickly without any irritating smoke.

5 Advantages Of Stainless Steel Catering Fabrication

Stainless steel catering fabrication has been used in restaurants, hotels and commercial kitchens for many years because stainless steel boasts a long life span, is easy to maintain and is easy to keep clean.

  • Easy to clean and maintain. Stainless steel does not absorb dirt.  All stainless steel catering equipment can be easily wiped clean with just a damp cloth.
  • Long life span. Being a rust proof and stain resistant material, stainless steel will retain its visual qualities for many years, it will not fade or become discoloured over time.
  • More hygienic. Stainless steel is non-porous and therefore will not harbour bacteria.  This makes it the natural choice for commercial kitchens and the material most preferred by Food Safety Inspectors for commercial kitchen installations.
  • Won't affect food tastes. Target use quality, 304 catering grade stainless steel in all their catering fabrications.  Catering grade stainless steel will not react with any foods, condiments or spices used during food preparation making it the ideal material for commercial kitchen installations.
  • Heat and corrosive resistant. As well as being heat proof and corrosive resistant stainless steel will not chip or crack.  This makes it perfect for areas of high wear and tear especially for use in commercial kitchens.

All Target Catering Equipment's stainless steel catering fabrications use quality, 304 catering grade stainless steel and is fully welded to promote longevity of product.

in Stainless Steel Equipment

Stainless steel catering equipment is tough, easy to clean and resistant to corrosion.  It is an essential part of the commercial kitchen because of the durability of work surfaces and kitchen hygiene.  There are several points to consider when purchasing stainless kitchen equipment, here are 5.

There is a lot of difference in the price as well as the quality of stainless steel kitchen equipment, these 5 points should help you make a better informed choice:

  • There are two main grades of stainless steel used in the manufacture of catering equipment.  Grade 430 which is cheaper stainless steel, containing just chromium and Grade 304 which is more resistant to corrosion, containing both chromium and nickel, this is more expensive.
  • Another important consideration when buying stainless steel sinks and tables is the thickness of the steel.  A thin guage will not be as durable as a thick one.  Top end, very heavy use stainless steel is 1.5mm thick, the usual thickness for stainless steel tables and sinks is 1.2mm.  It is possible to buy 0.9mm stainless steel but obviously this will not have a long life.
  • The finish of stainless steel is another factor to consider.  For catering equipment that is front of house or on public display such as serveries and counters, highly polished stainless steel may be used.  Satin finish is a fairly dull looking surface which is suitable where the appearance of tabling or sinks is not important and, with its close grain finish, brushed stainless steel is now proving to be popular as it does not show fingerprints so easily.  This makes it easier to keep clean than other finishes.
  • Weak points can occur in the fabrication of stainless steel catering equipment if cheap welding occurs.  With 304 stainless steel it is important that 304 stainless welding rods are used to avoid the weld becoming a vulnerable area.
  • Folding stainless steel increases the strength of the metal and although, in the case of pressed sinks, the metal becomes slightly thinner it will actually be stronger.

All Target stainless steel catering equipment is manufactured using 304 grade sheet stainless steel as well as 304 grade box stainless steel for legs, stands and tie bars.  1.2mm thick stainless steel is used in the construction of Target's tabling, hot cupboards and bespoke stainless steel catering equipment.  1.5mm thick is used in the construction of sink units.  304 stainless welding rods are used in all welding processes making Target's stainless steel catering equipment top quality and highly durable.

Stainless Steel Kitchen Equipment - Care And Maintenance

The stainless steel used in the manufacture of all Target Catering Equipment's commericial catering equipment is quality 304 grade stainless steel.  This is an extremely durable and stain resistant material. There are quidelines which should be followed in caring for your stainless steel catering equipment.

Stainless steel catering equipment is very easy to clean.  Simply wash using soap or mild detergent and warm water and a soft cloth or sponge.  It is important that surfaces are rinsed and dried off after use in order to prevent any possible alkaline build-up as a result of hard water.  Should any deposits build-up then these should be removed by the use of a mild, non-abrasive cleaning product - again, ensure that it is thoroughly rinsed off afterwards.

Avoid Using - will cause pitting and staining

  • abrasive cleaning materials
  • scouring pads
  • steel wool

Rinse Off As Soon As Possible

  • photographic developing liquids
  • bleach, caustic soda, strong clorine based cleaners
  • strong acids
  • kitchen salt or saline solutions

Avoid Prolonged Contact

  • citrus fruit juices
  • vinegar
  • salt

Avoid Direct Contact - will cause discolouration

  • rough, hot and wet pots and pans

Points To Rememeber

  • steel wool not only scratches stainless steel but will leave tiny particles of metal in the grain which will in turn develop into rust spots - it is the fragments of the steel wool that is rusting not the stainless steel catering equipment
  • if discolouration occurs it can be removed by rubbing gently in line with the metal grain direction using a fine nylon type abrasive pad
  • oil and grease marks can be successully removed by using hydrocarbon solvents (methylated spirit, isopropyl alcohol or acetone)
  • stubborn stains, light rust staining and light discolouration can be removed by using a mild non-scratching cream or polish which should be applied with a soft cloth or sponge and rinsed off
