Since winning the contract to supply Gloucester Cathedral with The Pilgrim's And Monks pies, Stroud Pasty Company needed a quicker way to cut out the triangular Holy Trinity pastry pie casings.

Traditional oven and bakery equipment suppliers Target Catering Equipment were asked if they could make special pastry cutters to help speed up production.

Paul Jackson of Stroud Slad Farm, home of Pilgrim's piemaker Naomi Walker and son Otto, made a template that Target used to fashion the exclusive pastry cutter out of stainless steel.

Now hungry "pilgrims and monks" needing a hearty pie can be sure of a bite to eat, as production can now keep up with demand.
