Based in a former 17th century hunting lodge, The Speech House Hotel, with its busy function suite and large garden marquee, was struggling to manage with the spiralling energy costs of LPG gas and an outdated kitchen and urgently needed an upgrade.

Energy specialist advisors were called in to survey the kitchen and suggest a way to reduce costs.  A change to more manageable and controllable electric catering equipment, including induction cooking technology was recommended and a visit to Target Catering Equipment's demonstration kitchen to trial cooking with induction and other energy efficient equipment was arranged.

On finalising the contract, Target's team of engineers set about removing all the redundant kitchen equipment and renovating the old Lincat hot cupboards which were also fitted with new hot pass gantries.  A new grill section gantry was manufactured and positioned over the existing fridge and table tops to create an island preparation area.

To replace the redundant LPG gas solid top and 6 burner gas range, Target Catering Equipment manufactured a bespoke Induction Solid Top Range Cooker incorporating an induction solid top with control power slide top.  The induction solid top replicates the features of a traditional gas solid top with programmable induction zones to enable graduated heat zones across the Ceran® glass top.

Providing extra oven space a versatile Blue Seal E31D4 oven and grill was incorporated into the Induction Soild Top Range Cooker.  The Blue Seal oven accepts standard gastro-norm containers and being programmable with simple digital controls, makes it ideal for the busy hotel kitchen.

The installation was completed ahead of schedule and Gill Hands, a director at The Speech House Hotel, is "over the moon" with the result.   The once sweltering kitchen has become a cool, calm and controlled cooking facility with energy efficient cooking technology producing perfect results using a fraction of the power previously consumed.
