Customised Induction Range Cooker Solves Listed Buiding Kitchen Ventilation Restrictions
The time had come when Burford House Hotel needed to upgrade its kitchen in oder to comply with current gas safe regulations as well as insurance standards. Listed buildings often offer the most challenging issues and unforseen circumstances when upgrading kitchens or embarking on renovations.
After visiting Target's demonstration kitchen, partners Ian and Stewart decided on induction cooking and a customised induction range cooker design to replace old equipment which they had inherited with the hotel when they took it over.
Having already used portable induction hobs, as a back up for the failing gas range, the choice to convert to induction cooking was already made and a customised commercial induction range cooker, with 8 cooking zones was designed incorporating a Blue Seal convection oven and grill and a mini combi from Convotherm. All appliances had to run on 230 volt, single phase power supply.
Target upgraded the electrical distribution system and rewired the cookline ready for the new equipment after walls were made good and clad in Altro whiterock wall cladding.
The existing ventilation outlet was enlarged to accept new ducting and new fan as well as a new, stainless steel ventilation system which was manufactured by Target.
To improve service and increase the plating up area, Target manufactured a heated gantry shelf to fit over an existing table ensuring piping hot plates and food left this amazing little kitchen in one of Burford's best loved hotels in the picturesque Cotswolds.
Completed before Christmas the kitchen was awarded a 5 star kitchen hygiene rating and operates like a dream for Stewart who commented
